Creamy Sweet Corn Pudding

Here’s a simple and delicious recipe for Creamy Sweet Corn Pudding:

Ingredients:

  • 2 cups fresh or frozen corn kernels
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/4 cup sugar (adjust to taste)
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • 1/4 cup shredded cheddar cheese (optional, for a savory touch)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a baking dish (about 8×8 inches) with butter or non-stick spray.

  2. Prepare the Corn: If using fresh corn, cut the kernels off the cob. If using frozen corn, thaw and drain it. You can use a food processor to pulse the corn a few times for a smoother texture if preferred.

  3. Mix Wet Ingredients: In a large bowl, whisk together the heavy cream, milk, sugar, eggs, melted butter, vanilla extract (if using), salt, and pepper.

  4. Combine Corn and Flour (if using): Stir in the corn and flour (if using) to the wet mixture. The flour helps thicken the pudding, but you can skip it for a more custardy texture. If you’re using cheese, stir it in at this point as well.

  5. Bake the Pudding: Pour the mixture into the prepared baking dish. Smooth out the top with a spatula. Bake in the preheated oven for 45-50 minutes, or until the pudding is set in the middle and golden brown on top.

  6. Cool and Serve: Let the corn pudding cool for about 10 minutes before serving. It will thicken slightly as it cools.
